Common Types in Hong Kong
The Consumer Council lists common types including totoaba-type maw (鰵魚膠), white maw (白花膠), yellow maw (黃花膠), zha maw (扎膠) and cod maw (鱈魚膠). Totoaba-type and white maw are the most prized, while cod maw suits a smaller budget.
Head Count Example
If one catty (600 g) contains 10 pieces, it is called “10-head” fish maw. A 5-head maw therefore has larger individual pieces than a 10-head maw.
How to Choose (Consumer Council Tips)
- 📏 Shape: large and thick; if two pieces have the same head count, choose the thicker one.
- 🎨 Colour: white or pale yellow, glossy, translucent, no blood vessels, clear ripple pattern.
- ⚖️ Head count: pieces per catty (600 g); fewer heads means larger pieces.
- ♂️ Male maw (花膠公) generally has better texture than female (花膠乸) and is usually pricier, though not all can be told apart by appearance.
Do Grades Mean More Nutrition?
The Consumer Council notes that blemishes such as blood vessels do not affect the traditional use but may lower the value. Price reflects type, size and appearance; we have not found official data showing nutrition differs by grade.
Nutrition and Traditional View
Consumer Council: fish maw is rich in protein and is traditionally said to nourish yin, moisten the lungs, tonify the kidneys and benefit the skin, which is why it is popular with women. We have not found an official Hong Kong Chinese medicine database entry for fish maw, so we do not add further claims.
Recipe 1: Soaking Dried Fish Maw 🌊
Ingredients: dried fish maw, water, ginger, spring onion.
- Rinse the fish maw and soak in plenty of water in the fridge overnight or until softened (thicker pieces take longer).
- Bring a pot of water with ginger and spring onion to the boil, turn off the heat, add the fish maw, cover and let it sit until the water cools.
- Rinse and soak again in cold water in the fridge, changing the water daily, until the maw is soft and springy.
- Trim any remaining blood vessels; rinse well.
- Use promptly, or portion and freeze.
💡 Use oil-free containers and utensils. Times are household guidelines and vary greatly with thickness and dryness.

Cautions
- The Consumer Council notes that fish maw can increase the thickness of breast milk, so breastfeeding mothers should not eat it immediately after giving birth, as it may raise the risk of blocked ducts.
- People with fish allergies should avoid fish maw.
- People with gout or on a low-purine diet should ask a doctor first.
- Pregnant women, children, people with chronic conditions or those on medication should consult a doctor or registered Chinese medicine practitioner first.
Storage Tips
- The Consumer Council advises storing fish maw in a sealed, cool place with as little air contact as possible to prevent moisture; a star anise placed nearby can help deter insects.
- Hong Kong is humid; refrigerate or freeze for longer storage.
- Soaked fish maw should be kept refrigerated and used promptly, or portioned and frozen.
- The Centre for Food Safety advises eating cooked food promptly; refrigerate leftovers within two hours and reheat until piping hot.
