Why Oil-Free Matters
Oil on containers or utensils can make fish maw break down during soaking, so wash everything thoroughly before use (shop experience).
How to Tell It Is Ready
- 🖐️ Soft and springy when pressed.
- 📏 Noticeably thicker and larger.
- 🚫 No hard core in the middle.

Cautions
- The Consumer Council notes that fish maw can increase the thickness of breast milk, so breastfeeding mothers should not eat it immediately after giving birth, as it may raise the risk of blocked ducts.
- People with fish allergies should avoid fish maw.
- People with gout or on a low-purine diet should ask a doctor first.
- Pregnant women, children, people with chronic conditions or those on medication should consult a doctor or registered Chinese medicine practitioner first.
- Keep soaking fish maw refrigerated; do not leave it at room temperature.
Storage Tips
- The Consumer Council advises storing fish maw in a sealed, cool place with as little air contact as possible to prevent moisture; a star anise placed nearby can help deter insects.
- Hong Kong is humid; refrigerate or freeze for longer storage.
- Soaked fish maw should be kept refrigerated and used promptly, or portioned and frozen.
- The Centre for Food Safety advises eating cooked food promptly; refrigerate leftovers within two hours and reheat until piping hot.
